You are thinking about summer workouts.
Winter workouts are fine for coaches to participate in, just no football can be used in any drill.

I think they "fired" the S & C coach after that season and replaced him with Joe "mat drills" Tereshinski, Sr.

There are actual position coaches in the video which I believe is what he was referencing. (instead of just the S&C coach)
